Very interesting, a Friend of mine, Xavier, bien in Sète took me out for dinner and I kindly asked that we, my family and I, try the Thielle. It is reported that the recipe (kept secret) comes from Napoli, together with the Italian migrants that came in for e in Sète in the lid 19th century. Now, my wife family is from Napoli and she never heard of such dish....but what a dish, it's just a very amazing simple, bit not that much, dish that is prepared by Sophie is an amazing taste. If you do pass around Sète, you have to go to her place and buy a couple of them because it's refined food, but it's a small cute tourte so you will want more. ...I leave the rest to Sophie's magic and you will understand what I mean. A real MUST!!

Excellente Tielles. i really enjoyed it. Shop is located in a nice corner of the city, near a square where you can sit and try your tielles in a open cafe. The shop is cash only and customer service is not super-friendly but you should prepare to enjoy this type of tourist-in-frech-local-village dialogue as a sign of authenticity, after all we don't want to be in super popular tourist spot always.

We came all the way from London to enjoy the Tielles. Absolutely delicious. The sauce is mindblowing - spicy with lots of flavor and seafood. Definitely worth the trip! We'll come back next time we visit Montpellier.
